This wine was first realised in 2009 when we were almost “playing a game” to make a sparkling wine with the classic method using a Sardinian grape variety. The game of the second fermentation in the bottle is so fun and rewarding that we decided to continue playing. After various positive and negative experiences, we are amazed by the “dégorgement”. After all the difficulties, we are fully rewarded by a wine that, after 24 months, has become a great emotion.
